Some (non meat) lunch ideas

In hot weather it's hard to manage meat at lunch time when on the road. some people just prefer not to eat meat. Here's a few ideas for lunches. You'll probably have more.
[list=]Canned tuna, fresh cucumber, lettuce, tomatoes, (eg grape tomatoes) cheese, red onion
Bread or lunch size crackers
Potato salad (made at home) including hard boiled egg, onion, mint, mayonnaise, with chopped nut garnish. 6 potatoes and 2 eggs last about 2 lunches for 2 people
Tuna and 4 bean salad made at home
Mountain bread (2 layers) spread with peanut butter and filled with salad
Platter - cheese portions, dried fruit, fresh fruit, raw vegetables, nuts, crackers
Hard-boiled egg mashed with mayonnaise, mint,parsley and finely chopped red salad onion
Leftovers from last night
Sprouts which you make along the way - alfalfa, mung beans etc
Home-made hummus (made before you leave) with sticks of carrot or celery[/list]
